Recipe: Simple Vegan Chocolate Chip Cookies

Do you ever crave chocolate chip cookies but don't have the ingredients or time to make them? Well, look no further than this simple vegan chocolate chip cookie recipe! It is only four ingredients, utilizing items you probably already have in your kitchen. These cookies contain no added sugar and can be made gluten-free. This is also a zero-waste recipe given that it makes use of overly ripe bananas that would otherwise go to waste. For other uses for overripe bananas, check out my blog post: 10 Uses for Overripe Bananas to Fight Food Waste.

INGREDIENTS:

  • 1 ripe banana

  • 3/4 cup oats (opt for gluten-free oats if you have a gluten sensitivity)

  • 1/3 cup chocolate chips

  • 2 heaping spoonfuls of peanut butter/nut butter of choice

  • More chocolate chips to top

DIRECTIONS:

  1. Preheat oven to 350°F

  2. Mash up banana with a fork

  3. Add in the rest of the ingredients and fold together

  4. Form little dough balls and place on greased baking sheet

  5. Top with more chocolate chips (duh!)

  6. Bake for 10-12 minutes or until desired golden brown

  7. Enjoy!!!

*Recipe makes about 9 small cookies
